Ingredients

  • 2 cups cooked rice
  • 1 lb boneless, skinless chicken thighs
  • 1 cup BBQ sauce
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1/4 cup chopped green onions
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat grill or grill pan over medium-high heat.
  2. Season the chicken thighs with salt and pepper.
  3. Grill the chicken for about 6-7 minutes per side, or until fully cooked. Brush with BBQ sauce during the last few minutes of grilling.
  4. Remove the chicken from the grill and let it rest for 5 minutes before slicing.
  5. In a bowl, layer 1 cup of cooked rice, followed by sliced grilled chicken.
  6. Top with corn, black beans, diced red bell pepper, and avocado.
  7. Drizzle additional BBQ sauce over the top if desired.
  8. Garnish with green onions and cilantro before serving.
