Ingredients

  • 2 cups cooked rice (white or brown)
  • 2 cups shredded cooked chicken
  • 1 cup BBQ sauce
  • 1 cup corn (canned or frozen)
  • 1 cup black beans (canned, rinsed and drained)
  • 1 cup diced bell peppers
  • 1 avocado, sliced
  • 1/2 cup shredded cheese (cheddar or pepper jack)
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, combine shredded chicken and BBQ sauce. Heat over medium heat until warmed through.
  2. In serving bowls, layer cooked rice as the base.
  3. Top the rice with the BBQ chicken mixture, corn, black beans, diced bell peppers, and avocado slices.
  4. Sprinkle shredded cheese and chopped green onions on top.
  5. Season with salt and pepper to taste. Drizzle with additional BBQ sauce if desired.
