Ingredients

- 2 cups cooked rice (white or brown)
- 2 cups shredded cooked chicken
- 1 cup BBQ sauce
- 1 cup corn (canned or frozen)
- 1 cup black beans (canned, rinsed and drained)
- 1 cup diced bell peppers
- 1 avocado, sliced
- 1/2 cup shredded cheese (cheddar or pepper jack)
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine shredded chicken and BBQ sauce. Heat over medium heat until warmed through.
- In serving bowls, layer cooked rice as the base.
- Top the rice with the BBQ chicken mixture, corn, black beans, diced bell peppers, and avocado slices.
- Sprinkle shredded cheese and chopped green onions on top.
- Season with salt and pepper to taste. Drizzle with additional BBQ sauce if desired.
- Serve immediately and enjoy your BBQ chicken bowl!
