Ingredients

  • 4 ripe peaches
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • to taste salt
  • to taste black pepper
  • for garnish fresh mint

Instructions

  1. Preheat the grill to medium heat.
  2. In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat and let it reduce for about 5-10 minutes until thickened. Remove from heat and let cool.
  3. Brush the cut side of the peach halves with olive oil and season with salt and pepper.
  4. Place the peaches cut side down on the grill. Grill for about 3-4 minutes until grill marks appear.
  5. Turn the peaches over and grill for an additional 3-4 minutes until tender.
  6. Remove from the grill and drizzle with the balsamic glaze.
  7. Garnish with fresh mint if desired and serve warm.
