- 4 boneless, skinless chicken breasts
- 1 cup grapes, red or green
- 1/2 cup balsamic vinegar
- 2 tablespoons honey
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh thyme for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat and let it reduce by half, about 10-15 minutes.
- Season the chicken breasts with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Add chicken breasts and sear for 4-5 minutes on each side until golden brown.
- Add the grapes to the skillet around the chicken. Drizzle the reduced balsamic glaze over the chicken and grapes.
- Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the chicken is cooked through and the grapes are caramelized.
- Remove from the oven and let rest for 5 minutes. Drizzle any remaining balsamic glaze over the top and garnish with fresh thyme if desired.
