Ingredients

  • 4 pieces salmon fillets
  • 3 tablespoons white miso paste
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 heads bok choy
  • 2 tablespoons sesame seeds
  • 2 stalks green onions
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the miso paste, honey, soy sauce, and rice vinegar to create the glaze.
  3. Place the salmon fillets skin-side down on a baking sheet lined with parchment paper.
  4. Spread the miso glaze evenly over the top of each salmon fillet.
  5. Bake the salmon in the preheated oven for about 12-15 minutes, or until cooked through and flaky.
  6. While the salmon is baking, heat sesame oil in a large skillet over medium heat.
  7. Add the bok choy to the skillet and sauté for about 3-5 minutes, until wilted and tender.
  8. Season the bok choy with salt and pepper, to taste, and sprinkle with sesame seeds.
  9. Once the salmon is done, remove it from the oven and let it rest for a couple of minutes.
  10. Serve the baked salmon alongside the sautéed sesame bok choy, garnished with chopped green onions.
