- 2 cups elbow macaroni
- 1 cup pumpkin puree
- 2 cups sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 cup Gruyère cheese, shredded
- 2 cups milk
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 teaspoon nutmeg
- 1/2 teaspoon cayenne pepper
- 1 cup panko breadcrumbs
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the elbow macaroni in boiling salted water until al dente, then drain and set aside.
- In a saucepan, melt the butter over medium heat.
- Whisk in the flour and cook for about 1 minute to create a roux.
- Gradually whisk in the milk and bring to a simmer, stirring constantly until thickened.
- Stir in the pumpkin puree, nutmeg, cayenne pepper, salt, and pepper.
- Remove from heat and add the shredded cheeses, stirring until melted and smooth.
- Combine the cheese sauce with the cooked macaroni and mix well.
- Transfer the mixture to a greased baking dish.
- In a bowl, mix panko breadcrumbs with melted butter and sprinkle over the top of the macaroni.
- Bake in the preheated oven for 25-30 minutes until bubbly and golden brown.
- Let it rest for a few minutes before serving.
