Ingredients

  • 8 ounces pasta of choice (penne, fusilli, or spaghetti recommended)
  • 1 block (8 ounces) feta cheese
  • 1 pint cherry tomatoes
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh basil, for garnish
  • Parmesan cheese, for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, add the block of feta cheese in the center. Surround it with cherry tomatoes.
  3. Drizzle olive oil over the feta and tomatoes, then sprinkle with minced garlic, oregano, salt, and pepper.
  4. Bake in the preheated oven for 30 minutes, or until the feta is soft and the tomatoes are bursting.
  5. While the feta and tomatoes are baking, cook the pasta according to package instructions. Drain and set aside.
  6. Remove the baking dish from the oven, and use a fork to mash the feta and tomatoes together until creamy.
  7. Add the cooked pasta to the baking dish and stir to combine all ingredients.
  8. Serve topped with fresh basil and grated Parmesan cheese if desired.
