Description
A festive dish to celebrate St. Patrick’s Day.
Ingredients

- 2 cups of cabbage, chopped
- 1 cup of carrots, grated
- 1 pound of corned beef, cooked and sliced
- 4 cups of potatoes, diced
- 2 tablespoons of butter
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 1/2 cup of green onions, chopped
Instructions
- Boil the potatoes in salted water until tender.
- In a separate pan, melt butter and sauté onions, cabbage, and carrots.
- Add the cooked corned beef to the sautéed vegetables.
- Drain the potatoes and add them to the mixture.
- Season with salt and pepper. Stir well.
- Serve warm with additional green onions on top.
Notes
- Use leftover corned beef for a quick meal.
- Adjust seasoning to your taste.
- Pair with Irish soda bread for a complete meal.
