Ingredients

Scale
  • 4 cups fresh apricots
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the sliced apricots with 1/2 cup of sugar and set aside to marinate for about 10 minutes.
  3. In another bowl, mix together the flour, baking powder, salt, and remaining 1/2 cup of sugar.
  4. Stir in the milk and melted butter until well combined.
  5. Pour the batter into a greased 9×13 inch baking dish.
  6. Spoon the marinated apricots evenly over the batter. Do not stir.
  7. Bake in the preheated oven for 30-35 minutes or until the top is golden brown and a toothpick inserted into the batter comes out clean.
  8. Let cool slightly before serving. Enjoy warm with ice cream or whipped cream.

Notes

  • You can substitute fresh apricots with canned or frozen ones; just make sure to drain them well.
  • For added flavor, consider adding a teaspoon of vanilla extract or a sprinkle of cinnamon to the batter.
