- 4 cups fresh apricots
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1/2 cup unsalted butter
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the sliced apricots with 1/2 cup of sugar and set aside to marinate for about 10 minutes.
- In another bowl, mix together the flour, baking powder, salt, and remaining 1/2 cup of sugar.
- Stir in the milk and melted butter until well combined.
- Pour the batter into a greased 9×13 inch baking dish.
- Spoon the marinated apricots evenly over the batter. Do not stir.
- Bake in the preheated oven for 30-35 minutes or until the top is golden brown and a toothpick inserted into the batter comes out clean.
- Let cool slightly before serving. Enjoy warm with ice cream or whipped cream.
