- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 4 oz cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a bowl, mix together the chopped spinach, cream cheese, mozzarella cheese, garlic powder, onion powder, salt, and pepper until well combined.
- Take each chicken breast and create a pocket by slicing it horizontally, being careful not to cut all the way through.
- Stuff each chicken breast with the spinach and cheese mixture, sealing the edges with toothpicks if necessary.
- Brush the outside of the stuffed chicken breasts with olive oil and season with salt and pepper.
- Place the stuffed chicken breasts in the air fryer basket in a single layer.
- Cook for 18-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from the air fryer and let rest for a few minutes before serving.
Notes
- Feel free to add herbs like basil or parsley to the stuffing mixture for extra flavor.
- You can substitute the spinach with other veggies like bell peppers or mushrooms depending on your preference.
- For a golden-brown finish, you can spray the chicken breasts lightly with cooking spray before air frying.
