Description

Deliciously tender and caramelized air fryer squash that makes for a perfect side dish.


Ingredients

  • 1 medium yellow squash, sliced
  • 1 medium zucchini, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for topping (optional)

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a large bowl, combine the sliced squash and zucchini.
  3. Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt, and pepper. Toss until the vegetables are well coated.
  4. Place the seasoned squash and zucchini in the air fryer basket in a single layer. You may need to do this in batches.
  5. Air fry for about 10 to 15 minutes, shaking the basket halfway through, until the vegetables are tender and slightly caramelized.
  6. Remove from the air fryer and sprinkle with Parmesan cheese if desired. Serve warm.

Notes

  • Feel free to use any type of squash you prefer.
  • Adjust the cooking time based on your air fryer’s model and the thickness of the squash slices.
