Description
Deliciously tender and caramelized air fryer squash that makes for a perfect side dish.
Ingredients

- 1 medium yellow squash, sliced
- 1 medium zucchini, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for topping (optional)
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine the sliced squash and zucchini.
- Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt, and pepper. Toss until the vegetables are well coated.
- Place the seasoned squash and zucchini in the air fryer basket in a single layer. You may need to do this in batches.
- Air fry for about 10 to 15 minutes, shaking the basket halfway through, until the vegetables are tender and slightly caramelized.
- Remove from the air fryer and sprinkle with Parmesan cheese if desired. Serve warm.
Notes
- Feel free to use any type of squash you prefer.
- Adjust the cooking time based on your air fryer’s model and the thickness of the squash slices.
