A quick and easy recipe for perfectly roasted squash and zucchini in the air fryer, seasoned to perfection.

- 2 medium zucchinis, sliced
- 2 medium yellow squash, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a large bowl, combine the sliced zucchini and squash.
- Drizzle with olive oil and sprinkle with garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss to coat evenly.
- Place the seasoned squash and zucchini in the air fryer basket in a single layer. You may need to do this in batches.
- Air fry for 10-12 minutes, shaking the basket halfway through, until the vegetables are tender and slightly crispy.
- Remove from the air fryer and serve immediately.
Notes
- Feel free to add your favorite herbs and spices to customize the flavor.
- If you prefer softer vegetables, you can reduce the air frying time.
- For a bit of a kick, add some red pepper flakes.
