A quick and easy recipe for perfectly roasted squash and zucchini in the air fryer, seasoned to perfection.


Ingredients

  • 2 medium zucchinis, sliced
  • 2 medium yellow squash, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a large bowl, combine the sliced zucchini and squash.
  3. Drizzle with olive oil and sprinkle with garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss to coat evenly.
  4. Place the seasoned squash and zucchini in the air fryer basket in a single layer. You may need to do this in batches.
  5. Air fry for 10-12 minutes, shaking the basket halfway through, until the vegetables are tender and slightly crispy.
  6. Remove from the air fryer and serve immediately.

Notes

  • Feel free to add your favorite herbs and spices to customize the flavor.
  • If you prefer softer vegetables, you can reduce the air frying time.
  • For a bit of a kick, add some red pepper flakes.
