Crispy and delicious air fryer spring rolls that are easy to make and perfect for any occasion!
Ingredients

- 1 cup cabbage, shredded
- 1 cup carrots, grated
- 1/2 cup bell pepper, thinly sliced
- 1/2 cup green onions, chopped
- 1 cup cooked shrimp or tofu, diced (optional)
- 1 tablespoon soy sauce
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 1 package spring roll wrappers
- Cooking spray or oil for brushing
Instructions
- In a large bowl, combine the cabbage, carrots, bell pepper, green onions, shrimp or tofu (if using), soy sauce, garlic, and ginger. Mix well.
- Lay a spring roll wrapper on a clean surface, with a corner pointing towards you.
- Spoon about 2 tablespoons of the filling onto the wrapper, fold the bottom corner over the filling, then fold in the sides and roll tightly.
- Repeat with remaining wrappers and filling.
- Preheat the air fryer to 375°F (190°C).
- Spray or brush the spring rolls lightly with cooking spray or oil.
- Place the spring rolls in the air fryer basket in a single layer, making sure they are not touching.
- Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Serve with your favorite dipping sauce.
Notes
- Feel free to customize the filling with your favorite vegetables or proteins.
- Make sure not to overcrowd the air fryer basket for even cooking.
