Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, combine panko breadcrumbs, shredded coconut, salt, black pepper, garlic powder, and cayenne pepper.
- In another bowl, beat the eggs.
- Dredge each shrimp in flour, shaking off excess.
- Dip the floured shrimp into the beaten eggs, ensuring they are fully coated.
- Coat the shrimp with the panko and coconut mixture, pressing gently to adhere.
- Place the coated shrimp in the air fryer basket in a single layer, making sure not to overcrowd.
- Cook the shrimp for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Remove the shrimp from the air fryer and serve immediately with sweet chili sauce for dipping.
