- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- Cooking spray
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a shallow bowl, combine flour, garlic powder, salt, black pepper, and paprika.
- In another bowl, beat the eggs.
- In a third bowl, mix together the shredded coconut and panko breadcrumbs.
- Dip each shrimp first into the flour mixture, then into the beaten eggs, and finally coat with the coconut and panko mixture.
- Place the coated shrimp in a single layer in the air fryer basket. Make sure they are not crowded.
- Spray the shrimp lightly with cooking spray.
- Air fry for 8-10 minutes, or until golden brown and crispy, flipping halfway through.
- Serve with your favorite dipping sauce.
