Instructions
- In a mixing bowl, combine shredded chicken or beef, cheese, beans, cumin, garlic powder, and salt. Mix well.
- Place a tortilla on a flat surface. Spoon about 1/2 cup of the filling mixture onto the center of the tortilla.
- Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top to form a chimichanga.
- Repeat with the remaining tortillas and filling.
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
- Brush the chimichangas lightly with olive oil on all sides.
- Place the chimichangas in the air fryer basket in a single layer, making sure they are not touching each other.
- Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Serve hot with sour cream and salsa on the side.
