Instructions

  1. In a mixing bowl, combine shredded chicken or beef, cheese, beans, cumin, garlic powder, and salt. Mix well.
  2. Place a tortilla on a flat surface. Spoon about 1/2 cup of the filling mixture onto the center of the tortilla.
  3. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top to form a chimichanga.
  4. Repeat with the remaining tortillas and filling.
  5. Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  6. Brush the chimichangas lightly with olive oil on all sides.
  7. Place the chimichangas in the air fryer basket in a single layer, making sure they are not touching each other.
  8. Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  9. Serve hot with sour cream and salsa on the side.
