Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. In a large bowl, combine olive oil, soy sauce, lemon juice, garlic powder, paprika, salt, and black pepper.
  2. Add the chicken pieces, bell pepper, and onion to the marinade. Toss to coat evenly and let it marinate for at least 30 minutes.
  3. While the chicken is marinating, soak wooden skewers in water for 30 minutes to prevent burning.
  4. Preheat the air fryer to 400°F (200°C).
  5. Thread the marinated chicken, bell pepper, and onion onto the skewers, alternating between the ingredients.
  6. Place the skewers in the air fryer basket in a single layer. Do not overcrowd.
  7. Cook in the air fryer for 10-15 minutes, turning halfway through, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Remove from the air fryer and let rest for a few minutes before serving.

Notes

  • Feel free to add your favorite vegetables like zucchini or cherry tomatoes.
  • You can also use chicken thighs for more flavor and juiciness.
